- Substance is a rare wine bar, known only to wine connoisseurs, in the Gion neighborhood that is home to many secluded restaurants. The owner is a businessperson who travels between Kyoto and France, operating this restaurant in Kyoto for only a few months a year. For instance, even if it is open from March to the end of April, it may be closed for two months from May to June.
- Despite its irregular schedule, Kyoto wine lovers visit this bar for its selection of scarce, fine-quality wines that are not imported to Japan. The owner sources wines that are transported by air from France, according to their reputations in France, trends, and what wines are best served when.
- The owner said, “When the timing allows, I also offer cheeses, cured ham, and other products that are rare in Japan. And if a customer requests a certain vintage or brand, I do my best to seek out and procure it.” Substance is the place to enjoy a blissful experience with your favorite wines accompanied by robustly flavored cheeses and bread.
